Beer in pancakes? Yes! I spent the summer working with our team at Paz Publishing to create a new outdoor adventure cookbook called The Colorado Camping Cookbook, by Graham Walker which was just released, GET IT HERE. We worked with chefs, local farmers and outdoor adventure types to bring this project to life.
Here is one of the featured recipes! Enjoy on your next camping trip.
COLORADO STOUT PANCAKES
-Serves 4-
Beer and pancakes may not seem like a likely combination but the flavors packed in dark stout beers are perfect for breakfast. This recipe features Hammer & Sickle, Russian Imperial Stout from Renegade Brewing Company in Denver, but you can use any stout style beer from your favorite brewer.
Ingredients
- Pancake mix
- 1 can Hammer & Sickle, Russian Imperial Stout beer
- ¼ cup chopped walnuts
- 2 tablespoons butter, plus more for serving
- maple syrup
Instructions
Follow the package directions of the pancake mix and instead of adding water, add beer. Add the walnuts and stir to combine well. Let the mixture stand for a few minutes.
Heat the butter in a large cast iron skillet over hot coals or on a portable gas stove and swirl to coat the pan. Spoon the pancake mix into the pan in your desired pancake size, and cook for 3 to 4 minutes on both sides, or until golden brown.
Serve with maple syrup and butter.
